Spice up Taco Tuesday with this plant-based “fauxrizo” made with pecans and cauliflower.

Pecan “Fauxrizo”

Ingredients

Preparation

  1. Heat oil in a large skillet over medium heat. Sauté onions until softened, about 5 minutes. Sauté garlic until fragrant. Add pecans and riced cauliflower, stirring to combine.
  2. In a small bowl, combine spices. Stir in apple cider vinegar and 1 tablespoon water. Add spice mixture to skillet and stir to combine.
  3. Cook until mixture is heated through, about 10-15 minutes. Add water if mixture begins to dry out or stick. Season with salt to taste.

  1. Brush each tortilla lightly with oil. Cook briefly on a griddle or in a skillet until browned on both sides.
  2. Fill each tortilla with “fauxrizo”, top with diced pineapple, sliced jalapeños and sliced radish. Sprinkle with cilantro and serve with lime wedges.
