Preparation
- Combine coconut milk, water, and salt in a large saucepan. Bring to a boil. Stir in rice, reduce heat to low, cover, and cook for 15-20 minutes, until all liquid is absorbed.
- Toast coconut flakes in a skillet over medium heat for 3-5 minutes until golden stirring frequently. Set aside.
- Heat oil in skillet over medium-high heat. Add snow pea strips and sauté until tender.
- Stir snow peas, toasted coconut, and toasted almonds into rice using a fork.
